Christmas 2014 Truffles

Start with 11 pound blocks of Callebaut Belgian Chocolate.  White chocolate, Milk Chocolate and Dark Chocolate.

Break off pieces to melt into ganache


Here they are, 285 ganache balls ready for enrobing in chocolate!

CHOCOLATE MOUSSE CAKE.  This is a flour-less cake made with chocolate, eggs, cream, butter and sugar.

First break out the 10 lb block of Guittard Dark Vanilla Chocolate - yum!

Then assemble your mise en place

Cakes are done!

Stacked with Mousse filling

Mousse on top and lightly on the sides
And VOILA!

Brookside Showpiece

Showpiece I did for Brookside HOA (Stockton) for their annual party.  The "Brookside B" logo came out great and they loved the super delicate framework.  I can't believe it made it on the 40 min drive to deliver without breaking!

Free form chocolate

This 3D shape was formed by hand with tempered chocolate just before it set up.  Very hard to do and I'm not telling how I did it! lol    If you work with chocolate, you'll know this is tough!
